Broccoli Cheddar Soup

Total Time: 50 minutes Prep: 5 minutes Cook: 45 minutes Servings: 2


4 cups of Swiss chard stock
1 block of Daiya cheddar cheese
2 shallots
3 cloves of garlic
1 crown of broccoli


  1. Pour stock into a medium or large pot and heat until boiling

  2. Chunk the Daiya cheese block into quarters and add to stock. Turn down heat to medium high.

  3. While liquid is cooking, chop shallots, garlic and broccoli.

  4. Place vegetables into a medium skillet and saute for 5-10 minutes.

  5. After 30 minutes, remove cheese blocks from liquid.

  6. Add vegetables to liquid and let simmer for about 10 minutes. Then serve immediately.
