Ultra Light Pesto Pasta
Total Time: 30 minutes Prep Time:5 minutes Cook Time: 25 minutes Servings: 2
1 box of chickpea pasta
4 oz of sunflower oil
3 cloves of garlic
1/2 cup of basil
1/4 cup of pine nuts
1/4 cup of nutritional yeast
1. Bring a large pot of water to a boil and add pasta. Reduce to medium-high heat and cook for approximately 20 minutes or until pasta is done to your liking.
2. While pasta is cooking, add garlic, oil, pine nuts, and basil to blender and puree until garlic is minced. Set aside.
3. When pasta is finished, strain and place into a large bowl. Mix in pesto and nutritional yeast.
4. Serve immediately or portion into tupperware.
