Roasted Harvest Veggies
Total Time: 1 hour 15 minutes Prep Time: 15 minutes Cook Time: 1 hour Servings: 5
5 red potatoes
4 peeled sweet potatoes
3 stalks of celery
4 peeled carrots
1. Preheat oven to 400 F.
2. Chop potatoes, sweet potatoes, carrots, and celery. Drizzle with oil and sprinkle with rosemary, sage and thyme. Mix until vegetables are well coated.
3. Cover dish and place in oven for 1 hour. Uncover and toss mixture after 30 minutes. Recover when placing back into oven.
4. While vegetables are roasting, heat a small pan and lightly drizzle a small amount of oil into the pan. Chop shallots and saute for about 5-10 minutes on medium heat. Set aside.
5. When vegetables are done, mix in shallots and serve or pack into tupperware.
