1 and 1/2 cups of cooked chickpeas
32 oz of fresh salsa
5 soft tortillas
1 tbs of Stevia Brown Sugar
(Optional) 5 slices of vegan cheese (I use Violife)
1. Place salsa in a medium skillet and cook on medium heat for about 20 minutes, until the excess liquid is reduced.
2. Add in brown sugar and cook for an additional 2 minutes.
3. Add in chickpeas and let rest for 3 minutes.
4. Laying the tortilla flat, place a slice of cheese in the center of the tortilla and portion about 1/2 cup of mixture onto tortilla. Serve immediately.
Meal Prep Tip
Keep tortillas separate from mixture. Combine after mixture has been reheated.
