Sweet Potato Sage Soup
Prep Time: 10 minutes Cook: 30 minutes Total Time: 1 hour Servings: 4
5 medium sweet potatoes
4 cups of vegetable stock
1/2 cup of almond milk
1/4 cup of sage
1/4 cup of chopped pecans
Wash, peel and quarter sweet potatoes.
Put stock and sweet potatoes into a large pot on medium high heat and cook for 30 minutes.
Once sweet potatoes have soften, set aside to cool for approximately 20 minutes.
Once mixture has cooled, add in almond milk.
Using an emulsion blender or regular blender, blend until smooth.
Return to stove and reheat for approximately 10 minutes on medium heat.
Garnish with fresh sage and pecans.
