Mexican Potatoes

Mexican Potatoes

Total Time: 1 hour and 10 minutes Prep Time: 10 minute Cook Time: 1 hour Servings: 5

5 red potatoes
1 container of fresh salsa
1 tsp of stevia brown sugar

!. Preheat the oven to 350F.
2. Chop 5 washed potatoes finely and place into a glass baking dish. Drizzle with oil.
3. Cover and place into oven for 30 minutes. Flip potatoes, cover and place back into over for another 30 minutes.
4. While potatoes are cooking, heat a frying pan on medium heat. Add in salsa and reduce until extra liquid has evaporated. Add in brown sugar, stir and remove from heat.
5. Once potatoes are done, pour salsa on top of potatoes. Mix and serve immediately or portion into tupperware.
