Classic Risotto

Classic Risotto

Total Time: 1 hour and 10 minutes Prep Time: 5 minutes Cook Time: 1 hour and 5 minutes Servings: 5

Ingredients
1/2 cup of uncooked arborio rice
4 cups of vegetable stock
1 bunch of asparagus
2 shallots
2 leaves of swiss chard
3 cloves of garlic

Directions
1. Preheat oven to 350F.
2.Heat a large frying pan on medium heat and drizzle with oil. Finely chop asparagus, swiss chard, shallots and garlic. Add to frying pan and saute for 5 minutes.
3. In a large baking dish, add all ingredients and mix well. Cover and place in oven for 1 hour, stirring every 20 minutes.
.4. Remove from oven and let it sit for 5-10 minutes. Serve or portion into tupperware.
