Italian Chickpea Wraps
Total Time: 30 minutes Prep Time: 5 minutes Cook Time: 20 minutes Servings: 5
2 cups of cooked chickpeas
5 whole wheat wraps
5 campari tomatoes, sliced
1 cup of shredded lettuce
5 slices of red onion
5 tbs of Italian dressing
1.Preheat oven to 350F and grease a large baking sheet.
2. Place chickpeas onto baking sheet and sprinkle with oregano, basil and black pepper to taste. Mix well.
3. Bake for 20 minutes.
4. Remove from oven and let cool for approximately 5 minutes.
5. To assemble, lay one tortilla flat. Then place lettuce, chickpeas, tomatoes and red onions. Drizzle with Italian dressing.
