1 16oz bag if mixed petite potatoes
4 cups of vegetable stock
3 leaves of swiss chard
1. In a large pot, add vegetable stock and black pepper to taste. Chop potatoes and dice shallots, and add to pot. Bring to a boil and then reduce to medium high heat. Let cook for 30 minutes.
2. Thinly dice the swiss chard and add to pot after 20 minutes.
3. Allow soup to set for 5-10 minutes then serve or portion into tupperware after it’s fully cooled.
