Ginger White Bean Burgers
Total Time: 20 Minutes Prep Time: 5 Minutes Cook Time: 15 Minutes Servings: 4
15oz of canned great northern beans
1/4 cup of nutritional yeast
3 tbps of soy sauce
1 tsp of cumin
1 tsp of ginger
1 tsp of garlic
1/4 cup of vital wheat gluten
2 tbs of cornstarch
3 shishito peppers
1/2 cup of shiitake mushrooms
1/3 cup of mirin
4 whole wheat hamburger buns
1. In a blender, combine strained and rinsed beans, nutritional yeast, say sauce, ginger, garlic, vital wheat gluten and cornstarch. Blend until smooth and let sit for 5 minutes.
2. Heat a small frying pan to medium heat. Finely dice shallots and shishito peppers. Add shallots, peppers, mushrooms and miriin to the pan and saute for approximately 10 minutes. When finished, the shallots should be caramelized and the mushrooms completely cooked through.
3. Heat a medium-sized frying pan to medium high heat and add in a small amount of oil. Form 4 patties with the white bean mixture and place in the pan. Cook for approximately 3 minutes per side, or until each side has browned.
4. Place patties on hamburger buns and top with vegetable mixture.
