Vegan Blackberry Banana Pancakes

Total Time: 25 Minutes Prep Time: 10 Minutes Cook Time: 15 Minutes Servings: 2

Ingredients
1 banana
8oz of blackberries
1/2 cup of whole wheat flour
1 tsp of baking soda
1/2 cup of baking stevia
1/2 cup of unsweetened vanilla almond milk


Directions
1. In a mixing bowl, combine 1/2 of a banana and 6oz of blackberries. Mash until mixture is smooth.

2. Add flour, baking soda, stevia, and almond milk to bowl. Mix until smooth.

3. Heat a small pan to medium heat and pour 2-3 tbs of batter into the pan. Cook for approximately 5 minutes per side, or until each side is browned and firm.

4. Garnish with remaining fruit and serve.
