Chickpea Parm

Ingredients
24 oz of tomato sauce
3 cups of cooked chickpeas
1/2 cup of nutritional yeast
3 tbsps of reduced sodium soy sauce
1 tbsp of vital wheat gluten
1 tbsp of cornstarch

Directions
1. Pour tomato sauce into a medium sized sauce pan. Bring to a boil and reduce on medium high heat for 20 minutes.

2. Add chickpeas, nutritional yeast, soy sauce, vital wheat gluten, and cornstarch to a blender. Puree until slightly chunky. Let sit for 5 minutes.

3. Heat a large frying pan to medium heat and drizzle with a small amount of oil. Form 5 patties from mixture and add to frying pan. Cook for 5 minutes per side, or until each side is golden brown. Portion into tupperware.

4. Carefully portion sauce over each patty and let cool.
