Creamy Ginger Sweet Potato Risotto

Ingredients
2 cup of uncooked arborio rice
6 cups of vegetable broth
6 white sweet potatoes
2 tsp of ground ginger
1 cup of unsweetened vanilla almond milk

Directions
!. Preheat oven to 350 F.

2. Skin sweet potatoes and cut into wedges. Place into a baking dish and sprinkle with ginger powder.

3. Cover and cook for 1 hour. Remove cover and let cool.

4. Rinse arborio rice and place into a medium sized pot. Add in vegetable stock and bring to a boil. Reduce to medium high heat and cook until all liquid has evaporated. Set aside.

5. Once sweet potatoes have cooled, add sweet potatoes to arboio rice. Add almond milk to pot and roughly mash sweet potatoes. Alternatively: If you would like to make a creamier sauce, you can add sweet potatoes and almond milk to a blender and puree. Then add sauce to arborio rice.
