Easy Baked Potato

Ingredients
5 red potatoes
3 shallots
3 cloves of garlic
3 petite peppers
1 chili pepper

Directions
1. Preheat oven to 350F.

2. Using a small knife, puncture small holes on each side of each potato. I usually do about 3 per side.

3. Place potatoes into a baking dish, cover and cook for 40 minutes. Remove from oven and let cool.

4. Dice shallots and peppers. Mince garlic. Add to a medium-sized frying pan and saute for 10 minutes. Set aside.

5. Once potatoes have cooled, portion into tupperware. Carefully cut each potato down in half and top with equal portions of vegetable mixture.
