Breakfast Hash Wraps

Ingredients
10 red potatoes
8 campari tomatoes
2 shallots
3 cloves of garlic
2 bell peppers
2 jalapeno peppers
Paprika
10 whole wheat tortillas

Directions
1. Preheat oven to 400 F.

2. Slice red potatoes into small pieces and place into a baking pan. Drizzle with oil and sprinkle with paprika and black pepper.

3. Cover and bake potatoes for 1 hour.

4. While potatoes are cooking, heat a medium sized frying pan to medium heat. Drizzle with oil.

5. Dice shallots, bell peppers and jalapenos and mince garlic. Add to frying pan and saute for 10 minutes. Set aside.

6. When potatoes are done, uncover and let cool. Once cooled, combine with vegetables and mix well. Portion into tupperware.

7. When ready to serve, reheat hash mixture and then portion between two tortillas.
