Lentil Teriyaki Rice Bowl

Ingredients
1 cup of raw lentils
2 cup of uncooked wild rice
2 shallots
3 cloves of garlic
3 petite bell peppers
3 carrots
2 stalks of celery
3 tbsps of reduced sodium teriyaki sauce

Directions
1. Strain lentils and place into a medium sized pot. Cover with water and bring to a boil. Reduce to medium high heat and cook until all water has evaporated. Set aside and let cool.

2. Place rice into a medium sized pot and cover with water. Bring to a boil and reduce to medium high heat. Cook until all water has evaporated. Set aside.

3. Heat a large frying pan to medium heat and drizzle with oil. Dice shallots, peppers, carrots, celery and mince garlic. Add to frying pan and saute for 10 to 15 minutes, or until all vegetables have soften. Set aside.

4. Once rice and lentils are finished, combine both into frying pan with vegetables. Add in teriyaki sauce and saute on medium heat for 5 minutes.

5. Let cool and portion into tupperware.
