Orzo, Sweet Potato and Grapes

Ingredients
1 cup of raw orzo
5 white sweet potatoes
2 cups of grapes
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350 F.

2. Skin sweet potatoes and cut into wedges. Place into a baking dish, drizzle with oil and cover. Bake for 1 hour. Remove from oven and let cool.

3. Add orzo to a medium-sized pot and cover with water. Bring to a boil and reduce to medium heat. Cook for approximately 20 minutes, or until orzo is fluffy. Strain and set aside.

4. Slice each grape in half and add to a large frying pan. Saute on medium heat for 10 minutes. Set aside.

5. When swet potatoes have completely cooled, add to a blender with almond milk and puree until smooth.

6. Combine all ingredients into a single pan and mix well. Portion into tupperware.
