Pear Popovers

Ingredients
2 cups of all purpose flour
5 pears
1/2 cup of baking stevia
1 cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350F and grease a muffin tin.

2. Slice 2 pears into wedges, removing cores. Slice the remaining 3 pears into small pieces, removing cores.

3. Add pear wedges to a blender and combine with almond milk. Puree until smooth.

4. In a bowl, combine pear mixture, baking stevia and flour. Mix well.

5. Layer 10 muffin tins with 2 tbsps of batter. Evenly top with pear pieces. Cover with remainder of batter, approximately 1 tbsp for each cup.

6. Bake for 45 minutes, or until dough has browned and cooked fully though. Let cool and portion into tupperware.
