Roasted Mushrooms with a Sunflower Seed Coat

Ingredients
20 oz of mushrooms
1 cup of sunflower seeds
1 cup of panko
3 tbsps of reduced sodium soy sauce
1 tsp of ginger powder

Directions:
1. Preheat oven to 350F.

2. Place sunflower seeds, panko, soy sauce and ginger powder into a blunder and pulse until sunflower seeds are roughly grated.

3. Place mushrooms into a baking dish and cover with panko mixture. Mix well.

4. Cover and bake for 45 minutes.

5. Remove cover and let cool. Portion into tupperware.
