Stuffed Poblano Peppers

Ingredients
5 poblano peppers
15 oz of cashews
1/2 cup of nutritional yeast
1 tsp of paprika
1 tsp of chili powder
! cup of unsweetened vanilla almond milk

Directions
1. Preheat oven to 350 F.

2. Slice each poblano pepper in half. Place into a baking dish and drizzle with a small amount of oil.

3. Cover and bake for 30 minutes. Remove from oven and let cool.

4. Add cashews to a medium sized pot and cover with water. Bring to a boil and reduce to medium high heat. Cook for 20 minutes, strain and let cashews cool.

5. Once cooled, add cashews, nutritional yeast, paprika, chili powder and almond milk to a blender. Puree until smooth.

6. Once peppers have cooled, portion into tupperware. Top with equal portions of cashew mixture.
