Cauliflower Mashed Potatoes (Vegan)

Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
2 heads of cauliflower
2 tbsps of vegan butter
1/2 cup of unsweetened vanilla almond milk
1 tbsp of black pepper
1 tbsp of ground rosemary
1 tbsp of ground thyme

Directions
1. To steam cauliflower, fill a large pot with 1/3 of water and bring to a boil. Add trimmed cauliflower to a steamer attachment, cover and steam for approximately 10 minutes, or until cauliflower is tender.

2. Once cauliflower has cooled, add to a blender along with vegan butter, unsweetened vanilla almond milk, black pepper, ground rosemary and ground thyme.

3. Puree until smooth.

4. Serve and enjoy!
