Loaded Vegan Fries

Loaded Vegan Fries

Total Time: 1 Hour and 10 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour | Servings: 4

Ingredients
3 medium sized red potatoes
1-2 tbsps of sunflower oil
1 tbsp of black pepper
1 tbsp of paprika
1 tsp of cayenne
1 cup of shredded vegan pepper jack cheese
2 cloves of garlic
2 shallots
2 petite bell peppers

Directions
1. Preheat oven to 350F.

2. Slice 3 red potatoes into wedges and place into a glass dish or baking sheet lined with parchment paper.

3. Drizzle potatoes with sunflower oil and sprinkle with black pepper, paprika and cayenne. Mix well.

4. Bake potatoes for 1 hour, flipping after 30 minutes. After 50 minutes, remove fries from oven and sprinkle with vegan cheese. Bake for remaining 10 minutes.

5. While potatoes are cooking, dice shallots and peppers, and mince garlic. Add to a medium sized frying pan and saute for 10 minutes on medium heat, or until shallots become translucent.

6. When fries are done, top with veggie mix, let cool and serve!
