Vegan Poke Bowl

Vegan Poke Bowl

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 2

Ingredients
1/2 cup of wild rice
3 small beets
1 cup of sprouts
4 radishes
2 avocados
1 lime
1 tbsp of sunflower oil

Directions
1. In a small pot, add wild rice and cover with water. Bring to a boil and cook for approximately 20 minutes, or until all excess water has evaporated.

2. Skin and slice 2 small beets. Cut into long strips and add to a steamer. Steam for approximately 20 minutes or until beets are fully softened.

3. To make avocado lime sauce, add 1 avocado to a bowl. Drizzle in juice of one lime and sunflower oil. Mash until creamy. Set aside.

4. When ready to serve, portion rice into bowl. Top with 1/2 cup of sprouts, 2 thinly sliced radishes, sliced avocado and steamed beets. Drizzle with sauce.

5. Serve and enjoy!
