Vegan Berry Parfait

Total Time: 40 Minutes | Prep Time: 5 Minutes | Cook Time: 35 Minutes | Servings: 1

Ingredients
1 cup of cashews
1/2 cup of unsweetened vanilla almond milk
1 tsp of maple syrup
1/2 cup of fresh strawberries
1/2 cup of fresh blueberries
1/2 cup of fresh blackberries

Directions
1. Add cashews to a small pot and cover with water. Boil for 15 minutes, strain and let cool.

2. Add cashews, almond milk and maple syrup to a blender. Puree until smooth.

3. In a small glass, alternate layers of 2 tbsps of cashew mixture and fresh fruit.
