5-Ingredient Vegan Stuffed Sweet Potatoes

Total Time: 1 Hour and 20 Minutes | Prep Time: 10 Minutes | Cook Time: 1 Hour and 10 Minutes | Servings: 2

Ingredients
2 sweet potatoes
1/2 cup of canned black beans
1/2 cup of vegan cheese
1 avocado
Cilantro for garnish

Directions
1. Preheat oven to 400F.

2. Add sweet potatoes to a baking dish and pierce each potato on all four sides.  Cover and bake for 1 hour, flipping sweet potatoes after 30 minutes.  When done, potatoes should be completely soft in the center.

3. Remove sweet potatoes from oven, uncover and let cool.  Once safe enough to handle, slice sweet potatoes down the center and mash the inside of each potato.  

4. Top each sweet potato with 1/4 cup of canned black beans and 1/4 cup of vegan cheese.  Cover and bake for an additional 10 minutes.  Remove from oven and let cool.

5.  While potatoes are cooling, mash an avocado.  When ready to serve, portion avocado on top of each sweet potato and garnish with cilantro.

6. Serve and enjoy!
