Banana Walnut Muffins with Coconut Flour

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 12

Ingredients
1 ripe banana
1 cup of coconut flour
1 cup of oat flour
1/4 cup of stevia
1 tsp of xanthan gum
1/2 tsp of baking soda
1/2 tsp of baking powder
1 tbsp of coconut oil
1/2 cup of walnut pieces
1 and 1/2 cups of almond milk

Directions
1. Preheat oven to 350F.

2. In a large bowl, add 1 banana and mash until creamy. Add in coconut flour, oat flour, stevia, xantahn gum, baking soda, baking powder, melted coconut oil. walnut pieces and almond milk. Mix well.

3. Portion 2-3 tbsp of mixture into each muffin tin. Batter should yield 12 muffins.

4. Bake for 30 minutes, or until muffins have browned.

5. Remove from oven and let cool completely. Serve and enjoy!
