Carrot Cake Pancakes
Carrot Cake Pancakes

Ingredients
1 cup of all purpose flour
1/4 cup of coconut sugar
1/4 tsp of baking soda
1 small carrot
1 cup of almond milk
2 tsp of vegan butter
Optional
Maple syrup
Vegan butter
Directions
1. Add all purpose flour, coconut sugar and baking soda into a bowl. Finely grate in small carrot.
2. Add in almond milk and mix well.
3. Heat a small pan to medium heat and melt 1/2 tsp of vegan butter. Portion in 3 tbsp of batter and cook for approximately 3-5 minutes per side, or until each side has browned and is fully cooked through. Repeat until all batter is used. Batter should yield 4 pancakes.
4. Once cooled, top pancakes with vegan butter and maple syrup. Serve and enjoy!
