Chickpea Cutlets in a Creamy Vegan Artichoke Sauce

Total Time: 15 Minutes | Prep Time: 10 Minutes | Cook Time: 5 Minutes | Servings: 4

Ingredients
1 cup of boiled cashews
1 cup of artichokes
1/4 cup of almond milk
2 cups of cooked chickpeas
1 tbsp of cornstarch
1/4 cup of vital wheat gluten
1/2 cup of nutritional yeast
3 tbsps of reduced sodium soy sauce

Directions
1. In a blender, puree boiled cashews, artichokes, and almond milk. Set aside.

2. Combine chickpeas, cornstarch, vital wheat gluten, nutritional yeast, and soy sauce in a blender. Puree and let sit for 10 minutes.

3. Heat a large frying pan to medium heat and drizzle with oil.

4. Form 4 chickpea patties and add to pan. Cook for approximately 2-3 minutes per side or until chickpea patties are golden brown.

5. When ready to serve, top chickpea cutlets with artichoke sauce and enjoy!
