Chickpea Garden Wraps

Total Time: 30 minutes Prep Time: 10 Minutes Cook Time: 20 Minutes Servings: 5

2 cups of cooked chickpeas
1/2 small red onion
1/2 cup of grape tomatoes
1 cup of green leaf lettuce
5 tsp of Italian dressing
10 whole wheat tortillas
1 tsp of black pepper
1 tsp of paprika
1 tsp of oregano


1. Preheat oven to 350F.

2. Place cooked chickpeas on a large baking sheet and drizzle with oil. Sprinkle with black pepper, paprika and oregano. Mix well.

3. Bake chickpeas for 20 minutes. Remove from oven and allow to cool.

4. While chickpeas are cooking, finely chop red onion and green leaf lettuce into tiny shreds. Cut each grade tomato in half. Set aside.

5. Lay each wrap on a flat surface. Place a small amount of lettuce then chickpeas. Top with red onion and tomatoes. Drizzle with 1/2 tsp of Italian dressing.

Note: If you are meal prepping this meal, make either the morning of or the night before to avoid vegetables from becoming soggy.
