Chickpea Noodle Soup

Chickpea Noodle Soup

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4

Ingredients
6 cups of vegetable stock
15 oz of canned chickpeas
1 cup of frozen peas
2 stalks of celery
2 carrots
2 oz of vegan noodles
2 leaves of Swiss chard

Directions
1. Slice celery and carrots into thin pieces. Slice Swiss chard into thin strips and set aside. Defrost peas by adding to a strainer and running under warm water.

2. Add vegetable stock, canned chickpeas, peas, celery and carrots to a pot and bring to a boil.

3. Add in vegan noodles and boil for 10 minutes.

4. Remove from heat and add in Swiss chard. Let sit for 10 minutes.

5. Serve and enjoy!

As a side note, this is a very mild, “sick day” soup. If you’re looking for a little more flavor, I recommend adding a few drops of hot sauce to taste to each serving.
