Chili Lemongrass Tofu

Ingredients
15 oz of extra firm tofu
1/4 cup of reduced sodium soy sauce
1 tbsp of chili oil
1 tsp of grated lemon grass
2 tbsp of potato starch
1 tsp of onion powder
1 tsp of garlic powder
Garnish
Extra chili oil

Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.
2. Press tofu for 10 minutes to release excess liquid.
3. Add soy sauce, chili oil and lemon grass to a bowl. Mix well. Crumble tofu into bite size pieces and add to bowl. Mix well using a spoon. Note: If you're mixing this with your hands, it's recommended you wear gloves to prevent chili oil from irritating your skin.
4. Add potato starch, onion powder, and garlic powder to the bowl and mix well to ensure that tofu is well coated.
5. Add tofu to a baking sheet and spread out evenly. Bake for 40 minutes, tossing after 20 minutes. Remove from oven and let cool.
6. Optional: when ready to serve, top with extra chili oil and scallions.
7. Serve and enjoy!
