Chimichurri Butter Beans

Total Time: 10 Minutes | Prep Time:10 Minutes | Servings: 4

Ingredients
1/2 cup of extra virgin olive oil
1/4 cup of red wine vinegar
1/2 cup of fresh parsley
1 clove of garlic
1 tsp of red pepper flakes
1/2 tsp of oregano
1/4 tsp of sea salt
15 oz of canned butter beans

Directions
1. To make the chimichurri sauce, mince garlic and finely chop parsley, removing any stems.  Add olive oil, red wine vinegar, parsley, garlic, red pepper flakes, oregano and sea salt to a boil.  Mix well.

2. Strain and rinse butter beans.  Add to a large bowl and mix in chimichurri sauce.

3. Serve with your favorite bread, over rice or enjoy as is!
