Chocolate Cherry Cupcakes

Total Time: 40 Minutes | Prep Time: 10 Minutes | Cook Time: 30 Minutes | Servings: 8

1 cup of all purpose flour
1/2 cup of baking stevia
1 cup of vegan cocoa powder
1 tbsp of baking powder
1 and 1/2 cups of frozen cherries
1 and 1/2 cups of unsweetened vanilla almond milk
2 oz of vegan butter
2 tbsps of powdered munk fruit


1. Preheat oven to 350F and grease a muffin tin.

2. Add flour, baking stevia, cocoa powder, baking powder, 1 cup of frozen cherries (defrosted) and unsweetened vanilla almond milk in a bowl. Mix well.

3. Portion 2 tbsps of mixture into each muffin cup. Batter should yield 8 cupcakes.

4. Bake for 30 minutes. Remove from oven and let cool.

5. While cupcakes are baking, add vegan butter, 1/2 cup of frozen cherries (defrosted), and 2 tbsps of powdered sugar to a blender. Puree until cherries have completely broken down. Cover and refrigerate until needed. Note: you can use powdered sugar interchangeably with powdered munk fruit if desired.

6. Once cupcakes have full cooled, top each cupcake with 1/8 of frosting.

7. Serve and enjoy!
