Coconut Curry Potato Gratin

Ingredients
4 yellow potatoes
14oz of light coconut curry milk
1 tsp of onion powder
1 tsp of garlic powder
1/4 tsp of ground ginger
2 tsp of thai red curry paste
1 cup of shredded vegan cheese
Chives for garnish
Directions
1. Preheat oven to 400F.
2. Add coconut milk to a bowl and add in onion powder, garlic powder, ground ginger and curry paste. Mix until well combined.
3. Slice potatoes into thin rounds.
4. Add a small amount of coconut milk to the bottom of a baking dish to prevent potatoes from sticking. Layer your potatoes in rows and to baking dish. Pour the remainder of coconut curry mixture in. Sprinkle the top with vegan cheese.
5. Cover and bake for 1 hour, or until potatoes are fully softened. Uncover, remove from oven and let cool.
6. When ready to serve, sprinkle with chives and enjoy!
