Cozy Vegan Tuscan Soup

Cozy Vegan Tuscan Soup

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 5

Ingredients
3 cloves of garlic
2 shallots
3 carrots
2 stalks of celery
4 yellow potatoes
6 cups of vegetable broth
3 tbsp of tomato paste
2 tsp of onion powder
2 tsp of garlic powder
1 tsp of oregano
1 tsp of chili flakes
1/2 tsp of thyme
1/2 tsp of rosemary
30oz of cannelinni beans
1 cup of vegan parmesan 
2 cups of kale

Directions
1. Mince garlic and slice shallots, carrots, celery and potatoes.

2. Heat a large pot to medium high heat and add in a small amount of oil.  Add in garlic shallots and saute for 2 minutes.

3. Add in carrots and celery and saute for an additional 3 minutes.

4. Add in potatoes, vegetable broth, tomato paste, onion powder, garlic powder, oregano, chili flakes, thyme, rosemary and cannelinni beans.  Mix well and bring to simmer.  Cover and cook for 15 minutes, stirring occasionally.

5. Remove from heat and uncover.  Add in vegan parmesan and kale.  Mix well and let cool.

6. Serve and enjoy!
