Creamy Garlic Spinach Orzo

Ingredients
3 cloves of garlic
2 tbsp of diced white onion
1 cup of orzo
2 cups of vegetable broth
8 oz of vegan feta
1 tsp of garlic powder
1 tsp of onion powder
1/2 tbsp of dried basil
1 cup of baby spinach
Directions
1. Mince garlic and dice onion. Heat a large frying pan to medium high heat and add in a small amount of oil. Add garlic and onion to pan and saute for 2-3 minutes.
2. Rinse orzo and add to frying pan. Saute for 2-3 minutes.
3. Pour in 2 cups of vegetable broth and bring to a boil. Once boiling, reduce to medium high heat and let simmer. Cover and cook for 10 minutes, stirring occasionally.
4. Add vegan feta, garlic powder, onion powder and dried basil. Mix well, cover and let cool for an additional 10 minutes, or until vegan cheese has fully melted and liquid has become creamy.
5. Uncover and add in 1 cup of baby spinach. Mix well and cook for 2-3 minutes, until the spinach has lightly cooked. Remove from heat and let cool.
6. Serve and enjoy!
