Creamy Vegan Cashew Red Pepper Dip

Ingredients
2 bell peppers
1 cup of softened cashews
1 tbsp of miso paste
2 tsp of onion powder
1/4 cup of sunflower oil
Directions
1. Preheat oven to 400F.
2. Slice each bell pepper in half, removing the seeds. Add to a baking sheet and drizzle with a small amount of oil. Coat each pepper well and bake for 30 minutes, flipping after 15 minutes. Set aside and let cool.
3. Once cooled, add roasted peppers to a blender, along with softened cashews, miso paste, onion powder and sunflower oil. Blend until smooth.
4. Serve with your favorite veggies and enjoy!
