Crispy Tofu Cutlets

Ingredients
14oz of extra firm tofu
1/4 cup of lemon juice
1/4 cup of water
1 tbsp of reduced sodium soy sauce
1 tbsp of miso paste
3/4 cup of potato starch
Directions
1. Press your tofu to release any excess water and let sit for 10 minutes.
2. Cut tofu into 4 equal slices. Score the surface of one side of each piece of tofu.
3. To make the marinade, add lemon juice, water, soy sauce and miso paste to a bowl and mix well.
4. Add tofu cutlets to a shallow bowl or pan. Pour in the marinade and make sure that tofu is evenly covered. Let marinade for at least 15 minutes.
5. When ready to cook, heat a large frying pan to medium high heat and add enough oil to cover the bottom of the pan. Carefully add each piece of to the frying pan. Cook each side for approximately 5 minutes, or until tofu has turned golden brown. Remove from frying pan and let cool.
