Crispy Tofu Lettuce Wraps

Ingredients
14oz of extra firm tofu
2 tbsp of potato starch
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of paprika
1 tsp of chili powder
1 tbsp of reduced sodium soy sauce
1 tbsp of sunflower oil
8 lettuce leaves (I'm using butter leaf lettuce)
1/2 cup of thinly sliced nappa cabbage
Scallions to taste
Chili oil to taste
Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.
2. Crumble tofu into a large bowl and add in potato starch, garlic powder, onion powder, paprika, chili powder, soy sauce and sunflower oil. Mix until tofu is well coated.
3. Add tofu to baking sheet and spread out in an even layer. Bake for 40 minutes, tossing after 20 minutes. Remove from oven and let cool.
4. While tofu is baking, thinly slice cabbage and scallions. Set aside.
5. When ready to serve, portion tofu crumbles into lettuce leaves and top with cabbage, scallions and chili oil. Serve and enjoy!
