Early Summer Salad

Total Time: 15 Minutes | Prep Time: 15 Minutes | Servings: 2

Ingredients
2 cups of green leaf lettuce
1 cup of sliced strawberries
1/2 cup of diced mango
2 celery stalks
1/2 cup of sliced cucumbers
Garnish
Slivered almonds to taste
Dressing
1/2 cup of fresh blackberries
1 tsp of sunflower oil
1 pinch of stevia (more to taste)

Directions
1. To make dressing, juice 1/2 cup of fresh blackberries using a juicer or by pressing berries through a strainer. Add in 1 tsp of sunflower oil and stevia to taste. Mix well and set aside.

2. Slice strawberries, mango, celery, and cucumbers. Set aside.

3. Add green leaf lettuce, strawberries, diced mango, celery and cucumbers to a bowl. Garnish with slivered almonds to taste and drizzle with blackberry dressing.

4. Serve and enjoy!
