Easy Falafel Wrap

Easy Falafel Wrap

Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 2

Ingredients
1 and 1/2 cups of cooked/soaked dry chickpeas
1/4 cup of flax seed meal
1 tbsp of nutritional yeast
2 tbsp of sliced red onion
1 cup of fresh parsley, loosely packed
1 tsp of garlic powder
1 tsp of paprika
1/4 tsp of cumin
1/2 cup of sunflower oil
2 cups of butter leaf lettuce 
1/2 cup of grape tomatoes
1 cup of vegan feta
2 pitas
Dressing:
1/2 cup of parsley
1/2 cup of cilantro
1 tbsp of dill
1 tbsp of chives
2 tbsp of tahini
2 lemons
1/4 cup of water

Directions
1. Add cooked chickpeas, flax seed meal, nutritional yeast, red onion, 1 cup of parsley, garlic, paprika, cumin and sunflower oil.  Blend until smooth.

2. Heat a large frying pan to medium high heat and drizzle with a small amount of oil.  Form small patties with chickpea mixture and add to frying pan.  Cook for approximately 5 minutes per side, or until each side is golden brown.  Set aside and let cool.

3. To make the dressing, add 1 cup of parsley, cilantro, dill, chives, tahini, the juice of 2 lemons and water to a mason jar and use an immersion blender to puree until smooth.

4. Slice lettuce, tomatoes and vegan feta and add to a small bowl.  Toss with dressing.  Cut each pita bread in half and portion in salad mixture into each pocket.  Portion falafel into each pita.

5. Serve and enjoy!
