Easy Vegan Baked Ziti

Total Time: 1 Hour and 5 Minutes | Prep Time: 15 Minutes | Cook Time: 50 Minutes | Servings: 4

Ingredients
8 oz of chickpea penne pasta
32 oz of tomato sauce
1 tsp of baking stevia sugar
1 tbsp of oregano
3 shallots
3 cloves of garlic
2 bell peppers
5 slices of vegan cheddar cheese (I use Violife)
1/2 cup of almond milk
1 cup of vegan panko
1 tbsp of black pepper
1 tbsp of paprika

Directions
1. Bring a large pot of water to a boil and add chickpea pasta. Cook for approximately 20 minutes or until done to your liking. Strain and set aside to cool.

2. Slice shallots and bell peppers, and mince garlic. Add to a sauce pan along with tomato sauce, oregano and baking stevia sugar. Cook on medium heat for approximately 20 minutes.

3. In a small saucepan, add vegan cheese and almond milk. Melt on low for and stir frequently for 15 minutes. Set aside and stir occasionally.

4. Preheat oven to 350F. Add pasta to a baking pan. Top with cheese and sauce mixture. Mix well.

5. Garnish evenly with panko and then sprinkle with paprika and black pepper.

6. Bake for 20 minutes or until panko has browned.

7. Remove from oven, let cool and enjoy.
