3 small yellow potatoes
2 celery stalks
2 carrots
4 cups of vegetable broth
1 cup of tomato sauce
1 tsp of vegan worcestershire sauce
2 bay leaves
1 tsp of thyme
1 tsp of paprika
Directions:
1. Preheat oven to 400F and line a baking sheet with parchment paper.
2. To make vegan beef, add jackfruit to a bowl and press with fingers to create a shredded texture. Add in soy sauce, liquid smoke, onion powder, garlic powder, and 1 tsp of paprika. Mix well.
3. Add jackfruit to baking sheet and bake for 30 minutes, tossing halfway through. Remove from oven and let cool.
4. Dice onion and bell peppers. Slice carrots, celery and potatoes.
5. Heat a large pot to medium high heat and add in a small amount of oil. Add in onion and bell peppers and saute for 5 minutes. Add in carrots and celery and saute for an additional 5 minutes.
