Easy Vegan Greens Wrap with Homemade Avocado Dressing

1/2 of an avocado
1 tsp of sunflower oil
1 tbsp of agave nectar

2 large green leaf lettuce leaves
1/2 cup of watercress
1/2 of an avocado
2 campari tomatoes

1. To make dressing, mash 1/2 of an avocado in a small bowl. Add in sunflower oil and agave nectar. Mix well.

2. Slice 1/2 of an avocado and 2 tomatoes into small pieces. Set aside.

3. To make wraps, start with 2 large green leaf lettuce leaves. Add 1/4 cup of watercress to each leaf.

4. Add approximately 1-2 tbsps of dressing to each wrap.

5. Top with sliced avocado and tomato.

6. To roll wraps, start with the top part of the leaf (opposite the stem) and fold toward the center. Roll lettuce from right to left, pulling the content of the wrap towards your palm as you go to secure wrap.

7. Serve immediately and enjoy!
