Easy Vegan Veggie Mac & Cheese

Total Time: 50 Minutes | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Servings: 8

Ingredients
8 oz of chickpea elbow macaroni
20 slices of Violife vegan cheddar cheese
1/2 cup of unsweetened vanilla almond milk
2 shallots
2 cloves of garlic
1 head of baby broccoli
4 leaves of swiss chard
1/2 cup of panko
1 tbsp of paprika
1 tsp of black pepper

Directions
1. Bring a large pot of water to a boil and add chickpea pasta. Cook for 20 minutes or until done to your liking.

2. Add 20 slices of Violife cheese and almond milk to a medium-sized sauce pan. Heat on medium and stir occasionally until cheese has melted.

3. Mince garlic and dice shallots and swiss chard. Cut baby broccoli into tiny florets. Heat a small frying pan on medium heat, add vegetables and saute for 10 minutes. Set aside.

4. Preheat oven to 350 F.

5. Add pasta, cheese and vegetables to a glass baking dish and mix well. Top with panko, paprika and black pepper.

6. Bake for 20 minutes.

7. Remove from oven and let set for 10 minutes. Serve and enjoy!
