Garlic Herb Spaghetti Squash

Garlic Herb Spaghetti Squash

Total Time: 50 Minutes | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Servings: 2

Ingredients
1 spaghetti squash
Sunflower oil (or oil of your choice)
1/8 tsp of sea salt
1/2 cup of vegan butter
1/4 cup of fresh parsley (loosely packed)
1/4 cup of fresh basil (loosely packed)
1 clove of garlic
Pecans for garnish

Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.

2. Slice spaghetti squash lengthwise and scoop out seeds.  Add to a baking sheet and drizzle with oil.  Sprinkle with sea salt and brush to coat evenly.  Turn spaghetti squash face down so that the skin side is facing upwards.

3. Bake for 40 minutes, or until the inside of the squash is slightly brown.  Remove from oven and let cool completely.

4. While squash is cooling, melt vegan butter.  Add fresh herbs and grate a clove of garlic into the butter.  Mix well.

5. Once squash has completely cooled, use a fork to scrape the inside to create a spaghetti like texture.

6. When ready to serve, add to a bowl and drizzle with garlic herb butter and top with pecans for garnish.  Serve and enjoy!
