Hearty Vegan Vegetable Soup with Beyond Meat Sausage

Total Time: 8 Hours and 15 Minutes | Prep Time: 15 Minutes | Cook Time: 8 Hours (Passive) | Servings: 5

8 cups of vegetable stock
4 Beyond Meat Brat sausages
5 oz of red potatoes
3 shallots
2 stalks of celery
3 carrots
1 tbsp of thyme
1 tbsp of rosemary
1 tsp of black pepper

1. Dice red potatoes, shallots, celery and carrots and add to a slow cooker. Slice Beyond Meat sausage into thin slices and add to slow cooker. Pour in 8 cups of vegetables stock and sprinkle in rosemary, thyme, and black pepper.

2. Cook for 8 hours. Stir occasionally.

3. Serve immediately or let cool and portion into tupperware.
