Jackfruit Nachos

Jackfruit Nachos

Total Time: 45 Minutes | Prep Time: 10 Minutes | Cook Time: 35 Minutes | Servings: 4

Ingredients
1 cup of fresh salsa
15 oz of canned jackfruit
15 oz of canned black beans
4 cups of tortilla chips (approximation)
1 cup of shredded vegan cheese

Directions
1. In a medium sized frying pan, add fresh salsa, jackfruit and black beans.

2. Heat to medium heat and saute for 15 minutes, breaking up jackfruit while cooking to create a “pulled” texture.

3. While jackfruit is cooking, preheat oven to 350F and line a square baking dish with chips. Note: I use approximately 4 cups of tortilla chips in this recipe, but you can add more or less depending on your preference.

4. Portion jackfruit mixture evenly over chips and top with shredded vegan cheese.

5. Bake for 20 minutes.

6. Remove from oven, let cool and enjoy!
