Jackfruit Pulled Pork Tacos

Total Time: 25 Minutes | Prep Time: 10 Minutes | Cook Time: 15 Minutes | Servings: 4

Ingredients
1/8 cup of reduced sodium soy sauce
1 tsp of cornstarch
1 tsp of paprika
1 tsp of black pepper
1/2 tsp of liquid smoke
1 lemon
14 oz of canned jackfruit
4 whole wheat tortillas
1 cup of green leaf lettuce
1/2 cup of grape tomatoes
2 avocados

Directions
1. In a large bowl, combine soy sauce, cornstarch, paprika, black pepper, liquid smoke and the juice of 1 lemon. Mix well.

2. Add in jackfruit and crumble to create a “pulled texture”. Mix well so jackfruit is well coated.

3. Heat a large frying pan to medium heat and saute jackfruit for 15 minutes, or until jackfruit becomes browned and crispy.

4. When ready to serve, layer each tortilla with 1/4 cup of green leaf lettuce and 1/8 cup of grape tomatoes, sliced. Top with jackfruit and garnish with avocado slices.
