Lemon Garlic Pasta with Swiss Chard
Total Time: 30 minutes Prep Time: 5 minutes Cook Time: 25 minutes Servings: 2
1 box of chickpea pasta
3 stalks of swiss chard
3 cloves of garlic
1. Fill a large pot of water and bring to a boil. Add pasta and reduce to medium-high heat. Cook pasta for approximately 20 minutes or until it's done to your liking.
2.While pasta is cooking, heat a frying pan on medium heat and drizzle in oil and the juice of one lemon.
3. Dice shallots and swiss chard (stalks are optional to add) and mince garlic. Add to pan and saute for approximately 5-10 minutes. Once done remove from heat
4. When pasta is done, combine vegetable mixture and pasta. Squeeze the juice from two lemons over pasta and mix well.
5. Serve immediately.
