Lemon Garlic Pasta with Swiss Chard

Total Time: 30 minutes Prep Time: 5 minutes Cook Time: 25 minutes Servings: 4

Ingredients
8oz of chickpea pasta
2 shallots
2 leaves of swiss chard
2 cloves of garlic
3 lemons

Directions

1. Fill a large pot of water and bring to a boil. Add pasta and reduce to medium-high heat. Cook pasta for approximately 20 minutes or until it's done to your liking.

2. Dice shallots and swiss chard, and mince garlic. Add to a frying pan with the juice of 2 lemons. Saute for approximately 5 minutes on medium heat, or until shallots become translucent and bright pink.

4. When pasta is done, combine vegetable mixture and pasta. Squeeze the juice from one lemon over pasta and mix well.

5. Serve immediately or portion into tuppperware for meal prep.
